Chicken, Apple & Carrot Meatballs

A high protein, iron rich meatball with hidden veggies, sure to be devoured! Delicious hot, cold, or add to a tomato sauce and serve with pasta or rice for a delicious balanced meal.

Ingredients

• 1 shallot, finely diced
• 1/2 apple, grated
• 1/2 carrot, grated
• 50g breadcrumbs
• 250g chicken mince
• 2 tbsp grass fed liver powder (optional - we love chief nutrition!)
• 15g Parmesan cheese, grated (or dairy-free alternative)
• 1 tsp fresh thyme, chopped (or 1/2 tsp dried thyme)
• 1/2 tsp smoked paprika

Method

1. Finely dice the shallot and grate the carrot, apple & parmesan.
2. Add all of the ingredients to a food processor. Process until finely chopped.
3. Remove from the processor and shape into approximately 20 small balls.
3. Preheat your oven to 180C or 160C Fan and cook the meatballs for 15 minutes, turning them halfway through the cooking time.
4. Allow to cool before serving.
4. Can be stored in the fridge for 3-4 days, or the freezer for up to 3 months.
