1. Add the coconut milk, ginger & turmeric to a small saucepan. Over a low-medium heat, simmer for 6-7 minutes then turn off the heat and stir through the honey.
2. Set aside and leave the mixture to cool down for 10-15 minutes.
3. Pour the mixture through a fine mesh sieve to remove the turmeric & ginger pieces. Rinse the saucepan, then return the mixture to the saucepan.
4. Add in your choice of juice (we used orange) and the freshly squeezed lemon.
5. Sprinkle the gelatin powder evenly over the mixture and allow to bloom (you will notice it changing texture and start absorbing the mixture).
6. Put the saucepan back over a low heat and warm until the mixture becomes liquid again.
7. Pour the mixture into your chosen moulds (we got ours from Nutra Organis). Alternatively if you don’t have any moulds you could use a silicone loaf tin or glass container, filling it up about 1-2cm in depth and then chopping it up into squares or long strips (great for BLW) once set.
8. Place in the fridge to set, this will take an hour or so.
9. Store in the fridge and consume within 4 days.
